A foolproof way to quarantine and learn a new skill

Now that staying at home is the new normal, it is hard to find fun activities things to pass the time. That said, this foolproof way of passing time not only helps you be productive or learn a new skill, the reality is this is something that you can do when things are back to normal. If you are at a loss for what to do, I wanted to share with you one of my safe yet tasty foolproof way to quarantine during this pandemic,

Baking

list of ingredients

  • 160g plain flour
  • 1 tbsp cocoa powder
  • 1 tsp bicarbonate of soda
  • 50g salted butter
  • 150g caster sugar
  • 4 large eggs
  • 1 tsp vanilla extract
  • 100ml buttermilk
  • 1 tbsp red food colouring

For the cream cheese icing

  • 100g slightly salted butter
  • 225g icing sugar
  • 100g full fat cream cheese

Start off by mixing the flour, cocoa powder, bicarbonate of soda and salt in medium bowl and set aside. Then, mix the butter and sugar in large bowl using a whisk or an electric mixer for about 5 minutes or until the mixture is light and fluffy. Beat in eggs, one at a time.

Mix in the sour cream, milk, food colour and vanilla.

Then, gradually add the flour mixture that you set aside and beat it in slowly until the mixture is just blended. Do not overbeat!!

Preheat oven to 180 degrees. Using a spoon, spoon in the batter into the paper-lined cupcake cups, filling each cup about 2/3 full.

Bake for about 20 minutes or until the toothpick inserted into cupcake comes out clean.

Cool in the tray and on wire rack 5 minutes. Remove from tray and cool on a wire rack until completely cool.

While the cakes are cooling, make the icing.

For the icing

By beating together the butter and icing sugar using either an electric whisk or hand whisk until the mixture is pale and fluffy, wait for about 2 mins, then beat in the cream cheese for a further 1 minute until it is well combined.

Once the cakes are cool, use a piping bag fitted with a nozzle to cover the cakes with the icing and serve.

My cupcake mixture was a little more on the chocolatey side than on the red velvety side because, I didn’t have enough red food colour left. So, I had to make do with this as I was in the mood for baking. Overall, as this was my first time ever making what was supposed to be a red velvet cupcakes, the verdict from friends and our neighbours was that my cupcakes were delicious 🙂
